Blanching Tip
Blanch leaves by covering the plant with an upturned pot for 1–2 weeks before harvest — this reduces bitterness and produces pale, tender leaves preferred in French cuisine. Young spring leaves are mildest; older summer leaves are most bitter and medicinal.
