For baby leaf harvest: sow densely and cut with scissors at 2–3 inches tall when the first true leaves appear. For full-size leaves: thin to 4–6 inches. Baby Spinach leaves are smaller, more tender, and milder in flavour than mature spinach. Excellent raw in salads. Sow every 2–3 weeks for continuous supply.
